BROWN BUTTER AND GARLIC ROASTED
CARROTS WITH HONEY AND THYME.

The brown butter is what makes this dish truly sing.
The caramelized carrots with hints of garlic and
herbs will dance on your tongue in a way you
never expected from this simple vegetable.
MAKES 4-6 SERVINGS
4 tablespoon unsalted butter
1 tablespoon garlic- infused olive oil
1 pound baby carrots
3 dashes ground black pepper
1/2 tablespoon honey
1 teaspoon chopped thyme or parsley
Salt to taste
Preheat the oven to 425 F
In an oven safe skillet or cast-iron pan,
lightly simmer the butter on medium heat
until it browns. Add the olive oil, honey, herbs and pepper and mix in before adding the carrots.
Put the skillet into the oven to roast for 15-20 minutes or until the carrots are tender and slightly caramelized.
