When it comes to tellicherry peppercorns, size does indeed matter. To qualify as a tellicherry, a black peppercorn must measure larger than 4.25 mm. The larger the diameter of that tiny sphere, the more goodies inside—goodies that result in aromatic intensity and complex flavor notes. The larger size traces back to a late harvest, allowing for optimal fruit development after the green berry has turned deep red. Like all black peppercorns, the tellicherry is the dried fruit of the woody vine, Piper nigrum, native to South and Southeast Asia. Like all black peppercorns, the tellicherry is pungent and hot. It also has hints of citrus, pine and grass. This is the peppercorn to put in mills intended for special dishes and special guests. To lend complex pungency to soups, casseroles and sauces, add a cheesecloth pouch containing tellicherry peppercorns during the cooking process. Remove before serving.
