In my opinion, the best olive oil to pair it with is our rosemary olive oil. Use those 2 together to roast chicken & potatoes - use the rosemary to sauté up some aromatics & on the chicken, then add the fig to the aromatics & reduce it down to make a sauce to put over the chicken & potatoes. *chefs kiss*
